a day of roasting

our good friends were visiting this past week and brought us tomatillos from their garden. today I am roasting them and some red grape tomatoes we had lying around. mmm yummy.

tomatillos are part of the tomato family and are mostly grown in the western part of the country. once you peel back the leafy jacket, a sweet little green (sometimes with a purple hue) tomato is revealed.


to roast: slice the tomatillos into 1/4-1/2 thick slices. toss with olive oil and salt...

spread the mixture onto a baking sheet and roast at 375 degrees for about 35-40 minutes until brown and carmelized.
mine came out of the oven not looking as pretty as they went in. in fact, they look like old spinach garbage mush in this photo. possibly because I didn't use enough olive oil.*but*, they are delicious. sweet and salty combined.

farm share

This year, we went in on a 20-week farm share with a nearby farm called Brix Bounty. And we have loved it! It's more vegetables than we would normally buy in a week, but getting all this produce has forced us to get creative and eat them. We're actually glad to see the summer squash go and get in some fall crops. These food photos aren't the greatest, but I thought I'd give you a window into how we've used our farm share in recent weeks.

Here's just some of last week's bounty...I already put the kale, arugula, leeks, and lettuce in the fridge.


I used those gorgeous Roman beans to make some "BBQ" beans.


Farm onions, garlic, thyme, bay leave, smoked paprika, coffee, mustard, ketchup, and water in the crock pot.


Here is this week's farm share...mustard greens, arugula, dandelion greens, winter squash, lettuce, peppers, carrots, radishes, etc....


We also got some potatoes in our farm share last week, which we roasted and ate with the mustard greens (my new favorite) sauteed with bacon, onions, and garlic. Yummmmm.

collecting penguins

my dear friends just gave me a collection of iconic penguin book cover postcards as a thank you gift. I am giddy.



aren't they so pretty? I love each one intimately but realize I simply cannot display them all. at least, not at once. I am wondering if there is a non-college way to use postcards in home decor?

apple butter it is


last night I made apple butter from THIS recipe. I must admit, it was exhausting after a long week of work, especially the constant stirring for 1-2 (more like 3) hours. but, it was worth it. look how pretty they are! the bad news: all that effort made only 6 jars.

I will most likely do it all again as I have visions of myself giving them to every single person I know over the holidays. I walk up with a cute little jar (they still need ribbon) and people squeal in delight, "bridget! apple butter! my favorite! you are so talented! how do you do all the magical things that you do!?" and I just shrug shyly in response while handing it over.
